A little change from some serious topics. I just have to record this recipe here. I adjusted the recipe on the back of the Bob's Red Mill Buckwheat flour bag and these pancakes were a hit for all.
Ingredients:
1 C buckwheat flour
1 C White all-purpose flour
2 C Milk (I used Almond Milk because that's what I had on hand)
3 eggs from Wendy's farm (everything seems better when it comes from Wendy's farm!)
2 Tbsp Molasses
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp cardamom
1/2 tsp cinnamom
Mix the dry ingredients then add the wet ingredients. Pour about 1/2 C for each pancake onto a warm skillet (medium-low heat). Serve with your favourite toppings!
